An intimate four-course dinner pairing exceptional Italian wines with inspired Italian cuisine.

Curated by La Paulée Sommelier Nikita Malhotra and crafted by Guest Chef Hillary Sterling of Ci Siamo alongside Executive Chef James Hackney, each course explores the harmony between vineyard and kitchen in a modern celebration of Italian culinary tradition.

A Journey Through Italy

Showcasing flights of wine from Piedmont and Tuscany, this dinner celebrates the best Italy has to offer.

We will begin the dinner in the most Italian way: with a glass of Champagne. If you have been to Italy, you will recognize how much Italians love this wine from France.

The night concludes with Italy’s very own bubbles, Lambrusco, which, when asked, is every chef’s guilty pleasure.

Hilary Sterling

Executive Chef, Ci Siamo

Born and raised in Brooklyn, Hillary first felt the pull of the industry as a teenager bussing tables during summers in Montauk, NY. After receiving her business degree from Indiana University, Hillary enrolled in night classes at Chicago’s Le Cordon Bleu, graduating with a Culinary Arts diploma.

Hillary then returned to New York City, beginning her career in the kitchen of Bobby Flay’s Mesa Grill where she learned the critical balance between spice, heat, and acid. Hillary continued working with Flay, joining the team at the acclaimed Spanish restaurant Bolo, furthering her appreciation for Mediterranean cuisine and culture. She then turned her attention to Italy, working in the salumi and butchery department at Lupa Osteria Romana. It was there that Hillary developed a greater appreciation for the uniting power of food and the importance of intentionality in cooking. In 2010, she shifted her focus to the fine-dining world, assuming the role of chef de cuisine at Michelin-starred A Voce. Working under Chef Missy Robbins, Hillary fell in love with the regionality and traditions of Italian cuisine. Most recently, Hillary returned to her domestic roots as the executive chef and partner of Vic’s, where her menu of thoughtfully prepared dishes gained a loyal following.

At Ci Siamo, Hillary has created an ambitious restaurant centered around live-fire cooking and the understated excellence of seasonal ingredients. The culmination of her diverse culinary training and extensive travels, Ci Siamo is Hillary’s most personal project to date and celebrates the power of simplicity.

Jaime Dutton

Executive Director, La Paulée

 

Jaime Dutton has led La Paulée since 2007, shaping its portfolio of celebrated wine festivals including La Paulée, La Fête du Champagne, Convivio Italian and La Tablée. With a lifelong passion for French wine and culture, she holds a BA in French from the University of Pennsylvania and a master’s degree in International Wine Trade from the University of Dijon, based in Burgundy. Her career spans roles with Maison Champy in Burgundy and leading Spanish wineries, bringing deep international perspective to her work. Today, Jaime is dedicated to creating experiences that invite guests to discover a lasting connection to wine—one sip at a time.

Nikita Malhotra

Head Sommelier, La Paulée  

Nikita Malhotra is an award-winning sommelier with a career rooted in fine wine and distinguished restaurant programs. She has held senior wine leadership roles at Tangled Vine, Tribeca Grill, and Momofuku Ko, where her list won the Grand Prix category in the 2023 Star Wine List of the Year New York. Nikita was recognized as the 2022 MICHELIN Guide New York Sommelier of the Year as well as the 2025 Sommelier of Year in VinePair’s Next Wave Awards. In addition to her role with La Paulée, she is the beverage director and co-owner of New York hotspot Smithereens.

Daniel Johnnes’ Celebration of Burgundy

Daniel Johnnes’ journey to creating La Paulée de New York is rooted in a lifelong passion for France, its wines, and its culture. A first visit as a teenager sparked a love for the language, cuisine, and winemaking that would shape his career in New York’s fine dining scene. As Wine Director at Montrachet, Daniel began hosting intimate dinners with Burgundy’s top winemakers—nights marked by generosity, conversation, and exceptional wines. These experiences inspired him to bring the warmth and spirit of Burgundy’s harvest celebrations to New York, giving rise to La Paulée de New York. Recognized as one of America’s foremost sommeliers, Daniel has received three James Beard Awards, including Outstanding Wine and Spirits Professional of the Year, and has been honored as a Chevalier by the French Republic for his contributions to French wine and culture.
